We Finally Made Our Own Chewy Gummy Candy (and It Was a Sweet Success!)
We’ve been dreaming about this for so long: making our very own chewy gummy candy. You know, the kind you grab at the store that disappears way too fast because they’re just that addictive.
The thing is, we were a little scared. Candy-making feels like “science class meets kitchen,” and we didn’t want to waste ingredients or end up with a sticky mess. But after talking about it forever, we finally went for it, and we were shocked at how amazing it turned out!
Not only were the gummies delicious, but the process was fun and surprisingly easy once we got into it. The only real shocker? Discovering just how freaking sour citric acid is. One taste-test of that on its own and geesh we won’t be doing that again anytime soon!
What we loved most was how hands-on the process felt: blooming the gelatin, cooking the sugar, adding colors and flavors, and finally filling little molds that transformed into chewy candy. When we pulled them out of the fridge and popped the first gummy, it was official—we had made real, snackable, chewy gummy candy.
Ingredients
60 g powdered gelatin
140 g cold water (for blooming)
160 g sugar (to cook to 115–120 °C / 234–240 °F)
60 g water (for sugar mixture)
200 g glucose (or thick inverted syrup like corn syrup)
10 g citric acid (warning: seriously sour!)
2 drops food coloring (your choice)
5–10 drops aroma extract (your flavor of choice)
Pinch of salt
Method
Bloom the gelatin – Combine gelatin and 140 g cold water in a bowl. Mix well and set aside.
Cook the sugar – In a pot, combine 160 g sugar with 60 g water. Cook until it reaches soft-ball stage (115–120 °C / 234–240 °F). Remove from heat.
Add the syrup – Stir in the glucose or corn syrup until combined.
Mix in the gelatin – Add the bloomed gelatin to the hot sugar mixture and stir gently. Skim off foam or bubbles. Add food coloring, flavor extract, salt, and citric acid. Stir lightly.
Prepare bottles and molds – Divide the mixture into squeeze bottles if making multiple colors. Keep bottles in hot water so the mixture stays liquid. (Dont skip this step!)
Fill and chill – Fill your gummy molds and refrigerate for about 90 minutes.
Finish – Unmold the gummies. If you have dextrose powder, toss the gummies in it to keep them from sticking together.
